Your Guide to Pouchong Tea
Pouchong tea is produced in the Fujian Province of China, and also in the Pinglin District of Taiwan, an area renowned for Pouchong tea production. Rose Pouchong tea is a delightful, light and refreshing Chinese speciality tea, that has a sweet, rose-perfumed flavour, delicate, floral fragrance and a smooth finish. When infused, it yields a pale, straw-coloured liquor with a mild acidity.
Pouchong Oolong tea is produced in Taiwan, in the Pinglin District of New Taipei. It may also be referred to as ‘Baozhong tea’ and is sometimes called ‘flower tea’ because of its floral characteristics. Wen Shan Pouchong tea or Wenshan Baozhong are other names used for Pouchong teas. Like most teas, Pouchong is made with Camellia sinensis leaves, but when they are processed, the length of time they are oxidised is controlled to produce a tea that falls somewhere between a green tea and a light Oolong.
How Pouchong Tea is Produced
Unlike black teas, Pouchong teas are only lightly oxidised (fermented); in China, Pouchong is sometimes regarded as a green tea, even though it is slightly fermented and green teas are generally not oxidised at all. Pouchong Oolong tea, or Bao Zhong, is traditionally made with long, twisted leaves of a deep green hue, that are hand-picked around the end of March. After being slightly fermented, they are withered indoors, before being panned, rolled and dried. The name ‘Bao Zhong’ is believed to have originated in China more than a century ago, and means ‘the wrapped kind’; referring to particular teas of a twisted nature that were once wrapped in paper. Rose Pouchong tea leaves are interleaved with fragrant rose petals during the drying process, so they take on the delicate scent and natural flavour of the roses.

The delicate nature of Pouchong teas means they are best infused for a shorter time than black teas, and at a lower temperature, so the subtle flavours and aromas can be fully appreciated. Freshly boiled water should be used, preferably filtered tap or bottled spring water. Using 2 teaspoons of tea for every 236 ml of water, loose leaf Rose Pouchong and Pouchong Oolong teas should be steeped at temperatures between 85ºC-96ºC (185ºF-205ºF) for 2-3 minutes, or according to taste.
